A variedade de ingredientes, a imaginação das suas misturas e o fantástico resultado final são os motivos que me levam a publicitá-la.

Não deixa de ser um manifesto contra a tão em voga "cozinha de fusão". A cozinha é dos poucos valores intrinsecamente portugueses que eu considero que vale a pena defender.

Eu faço-o no Wok, mas seguramente resulta bem numa frigideira ou mesmo num tacho.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: arial;"&gt;Começo por fazer um bom refogado com cebola e alho a que, uma vez aloirado, vou juntando uns pingos (grossos) de brandy e deixando reduzir calmamente. Tempero com sal e piri-piri, adiciono um pouco de água e junto-lhe os camarões cujos rabos foram previamente descascados. Ficam a cozinhar durante uns cinco a sete minutos e retiro-os.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: arial;"&gt;Num tacho à parte, já escaldei os noodles, que agora se juntam ao molho e se envolvem no mesmo até estarem bem impregnados. Quando vim para casa, passei pelo Pingo Doce sem saber muito bem o que fazer para o almoço.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;Na peixaria, olhei para os camarões e apeteceu-me um cocktail dos mesmos. Nem era tarde nem cedo! Trouxe uma dúzia de bichinhos, uma alface e mãos à obra!&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;Cozi a bicharada enquanto preparava o resto: o molho, uma mistura de mayonnaise Vianeza, ketchup, piri-piri moído e flor de sal e a alface, cortada bem miúda.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;Na taça de cocktail, fiz uma sandwich de alface, camarões em pedacinhos, molho e mais alface. Como era só para mim, não me dei ao trabalho de enfeitar a taça com uns camarões inteiros.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;Enquanto tratava disto, bebi um copo de Gazpacho do Pingo Doce, absolutamente revigorante e tão bom ou melhor que o meu!&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;Agora vem a justificação do título do post....Sentei-me à mesa e fui dar o meu passeio pelos blogs através do reader. Dado que já andava a pensar em ressuscitar este cantinho, nem é tarde nem é cedo! É já!!&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:100%;"&gt;&lt;span style="font-family:arial;"&gt;Esta é a única foto que tinha disponível por aqui e por isso escolho esta salada de pato para reiniciar as hostilidades:&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:100%;"&gt;&lt;span style="font-family:arial;"&gt;Tinha comprado um pato e não me apetecia nenhuma das alternativas habituais (assado ou arroz do dito). Assim, e lembrando-me de uma famosa salada de pato dos inícios do Al Forno de Leça, resolvi compor uma à minha maneira.&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:100%;"&gt;&lt;span style="font-family:arial;"&gt;Dispus a alface lavada e cortada em pedaços num prato. Cortei uma cebola em fatias extremamente finas (como faço para a &lt;a href="http://queergourmet.blogspot.com/2005/08/tomatina.html"&gt;Tomatina&lt;/a&gt;) e espalhei por cima. No centro pus o pato (ah, esqueci-me de dizer que o tinha assado e desfiado) e enfeitei com croutons e cebolinhas em pickles, bem como gengibre de conserva bem picadinho.&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:100%;"&gt;&lt;span style="font-family:arial;"&gt;Senti imensa falta das nozes que punham no Al Forno, mas paciência. Eu costumo ir acrescentando umas gotas de água de modo a prolongar mais o apuro do refogado.&lt;/span&gt;&lt;br /&gt;&lt;span style="color: rgb(153, 255, 153);"&gt;Para fazer este arroz, há que lavar e arranjar uma quantidade absurda de grelos, dado que o seu volume vai diminuir drasticamente depois de cozinhados.&lt;/span&gt;&lt;br /&gt;&lt;span style="color: rgb(153, 255, 153);"&gt;Quando estes dois passos iniciais estão concluídos, acrescentamos um pouco de água ao refogado e deixamos os grelos a cozinhar em fogo lento. Temperamos com sal e piri-piri, de modo a que se sinta o picante...ajustamos a água e metemos o arroz. Vi a receita algures e comecei imediatamente a salivar, mas não me lembro onde foi! Achei que tinha sido &lt;a href="http://ardeu-padaria.blogspot.com/"&gt;aqui&lt;/a&gt;, mas parece que não. De qualquer maneira, o que interessa é que resultou lindamente.&lt;br /&gt;Sobre uma base de massa folhada do Pingo Doce barrei uma quantidade generosa de mostarda de Dijon, soltei umas pedras de sal e uns pós de piri-piri moido. O conviva habitual destas andanças veio de Londres na 6ª e trouxe um belo salmão fumado. Complementamo-lo com uma sopa de marisco de entrada, uns queijos, espargos e um grande tinto de Ribera del Duero. Isto tudo para chegar à sobremesa, onde fiz mais uma incursão com bons resultados: Petits Gâteaux de chocolate. Para ficar assim, esta ficou 45 minutos a 200º, mas isso depende do gosto e do tamanho da peça.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="color: rgb(255, 255, 255);"&gt;Para a feijoada, fiz um belo refogado com cebola e bacon aos pedaços, que deixei apurar bem. Aos poucos, fui juntando e deixando reduzir a água da lata do feijão, de modo a ir engrossando a base. Temperei com sal, cominhos e piripiri. Quando acabou a água, juntei os feijões e deixei a apurar em fogo muito lento, tendo o cuidado de ir mexendo sempre. Como comecei a fazê-la cedo, ainda me deu tempo para a desligar e voltar a aquecer à hora de servir, o que lhe deu ainda maior consistência.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="color: rgb(255, 255, 255);"&gt;Extraordinariamente, havia para sobremesa um pão de ló de Ovar, que rematou o jantarinho em beleza. É normalmente considerado um prato de doente, mas eu até o aprecio mais quando estou bem e com os sentidos todos apurados: frango cozido.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="color: rgb(255, 255, 255);"&gt;A preparação é facílima. Cozo um frango com bastante cebola em muita água, temperado só com sal. Quando está pronto, acrescento-lhe o arroz e deixo cozer para lá da conta.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="color: rgb(255, 255, 255);"&gt;Já no prato, desfio um pedaço de frango e rego com a água, cebola e algum arroz. Consome-se à colher. Fiz estas queijadas para a sobremesa do jantar de ontem, onde também servi um fondue de chocolate. São imensamente simples de fazer mas  desta vez o ponto de cozedura ideal não foi atingido, pelo que ficaram um pouco descaídas.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="color: rgb(255, 255, 255);"&gt;A receita é a seguinte: misturamos 2 ovos, 300 g de açúcar e 100 g de farinha (eu uso o meu Rocket Chef mas pode ser à mão ou numa outra batedeira), a que vamos juntando 1/2 l de leite. No fim, juntamos 50 g de manteiga derretida e acabamos de bater.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="color: rgb(255, 255, 255);"&gt;Enchemos até meio formas previamente (bem) untadas de manteiga e levamos ao forno a 200º cerca de 20 minutos, até começarem a ficar tostadas.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="color: rgb(255, 255, 255);"&gt;Se as formas tiverem sido bem untadas, o trabalho de desenformar as queijadas simplifica imenso.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="color: rgb(255, 255, 255);"&gt;Normalmente são um sucesso e desta vez, apesar do menos bom aspecto, foi o que aconteceu! Costumo fazê-los com febras ou costeletas (eu sei que se escreve fêveras, mas não gosto) e sempre de porco. No caso das febras gosto que sejam o mais finas possível, enquanto que no caso das costeletas não me importo que sejam grossas e de preferência do cachaço. Há quem faça com peito de frango ou perú, mas eu não aprecio a consistência destas carnes para isto.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="color: rgb(255, 255, 255);"&gt;Começa-se por temperar a carne com sal, pimenta preta moída na hora e bastante limão com umas horas de antecedência. Na altura da confecção, bate-se um ovo e põe-se uma boa quantidade de pão ralado num outro prato. Passamos a carne pelo ovo e envolvemo-la no pão ralado em seguida, tendo o cuidado de apertar bem dos dois lados, de modo a que a capa adira bem à carne.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="color: rgb(255, 255, 255);"&gt;Fritam-se os panados em óleo abundante e muito quente, até ficarem com uma cor bonita. É fundamental utilizar um papel absorvente para eliminar o óleo em excesso após a fritura. No prato rega-se com mais um pouco de sumo de limão.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="color: rgb(255, 255, 255);"&gt;Eu gosto de os acompanhar de diversas maneiras, dependendo da ocasião: arroz de tomate ou feijão, salada, um simples spaghetti ou mesmo em sanduíche. Se tiver uma camada de gordura exterior, tanto melhor. Pômos essa parte virada para baixo e ela vai derreter toda e escorrer para o fundo. Deu-me imenso jeito fazer isto ontem à noite porque deixei a assadeira no forno e fui para o ginásio. Segundo a criatura, alterava a hora para as criancinhas não sairem de casa ainda de noite. Só não se lembrou que a essa hora, ainda os ladrões, pedófilos e violadores ainda estão a dormir! (eu uso e abuso dos cominhos em todos os pratos de bacalhau!)  e frita-se o bacalhau na mesma frigideira. Começamos por ter um bocado de leitão daqueles menos apetecíveis (uma perna, por exemplo) e desfiamo-lo. Já com um bom refogado feito, estufamos bem o resultado desta trabalheira!&lt;br /&gt;&lt;br /&gt;Quando chega ao ponto, adicionamos o pão demolhado (de preferência do saloio!) e deixamos apurar. &lt;span style="font-weight: bold;"&gt;Fundamental&lt;/span&gt; é mesmo o molho de assar o bicho, que se vai adicionando a gosto.&lt;br /&gt;&lt;br /&gt;Podemos servir em doses individuais ou ainda no tacho. Em qualquer dos casos abrimos um ovo por cada comensal e misturamos bem. Como já viram pela foto, esta é uma açorda alentejana. Começa-se por cortar alho (ainda bem que não é picar alho) e picar coentros frescos em quantidade generosa para dentro de um almofariz, esmagando bem com o pilão. Cobrimos muito bem o fundo do tacho com azeite e juntamos esta mistura, que deixamos ferver sem queimar, juntando água aos poucos para o alho ir amaciando. Em seguida juntamos água e, quando ferve, metemos o bacalhau. No fim da cozedura, escalfa-se um ovo por cabeça.&lt;br /&gt;&lt;br /&gt;Serve-se sobre fatias de pão alentejano (trouxe-o nas férias para estas coisas...) num prato de sopa, regando abundantemente com o molho para amolecer devidamente o pão.&lt;br /&gt;&lt;br /&gt;Há outras opções em alternativa ao bacalhau, como por exemplo pescada com ameijoas ou cação, mas esta é a minha favorita. É claro que podem fazer como eu e usar grão de lata, mas cai sempre bem fingir que se demolhou e cozeu o grão....&lt;br /&gt;&lt;br /&gt;Quando as mãos acabam de cozer, desossam-se e cortam-se em pequenos pedaços, que vão a refogar no tacho. Em seguida, basta juntar o grão e ir mexendo sempre para não pegar. Após uma análise ao frigorífico, peguei em dois tomates, dois ovos, um chouriço e um bocadinho de queijo S. Jorge. Cortei uma cebola às rodelas para uma frigideira já com azeite e pu-la ao lume. Ao chouriço retirei uma boa fatia e cortei-a em pedacinhos que também foram para dentro da frigideira. Não me referi a ela como sendo "com todos" porque os hidratos de carbono estão muito condicionados cá em casa.... Assim sendo, bastou cozer a cabeçorra da bicha durante uns 30 minutos. Os ovos cozeram 7 e aos bróculos bastou levantar fervura para ficarem no ponto.&lt;br /&gt;&lt;br /&gt;Uma vez servida, rega-se a gosto com azeite virgem e mói-se pimenta preta sobre o prato.&lt;br /&gt;&lt;br /&gt;Desiludam-se aqueles que pensam que isto é um prato de "doente"! Devemos ir pondo sal, azeite e o indispensável Quinta da Avó em cada camada. Umas folhas de louro também ligam bem.Nada de pôr água !!&lt;br /&gt;&lt;br /&gt;Liga-se em lume forte até ferver e reduz-se em seguida. Basta cozê-los bem, guardando a água da cozedura. Num almofariz mói-se uma mistura de alho e coentros frescos, em quantidade quase exagerada, que se junta a um bom azeite virgem num tacho largo.&lt;br /&gt;Sem deixar queimar, vai-se acrescentando água da cozedura até que o alho comece a amolecer. É então que se juntam os pés, a que já retiramos os ossos maiores. Num prato com divisórias, disponho esses ingredientes um a um, a que junto umas pitadas de flor de sal e outras de pimenta preta moída na hora. A última divisória leva mostarda de Dijon.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family: arial;"&gt;Moldo a carne picada (seria suposto picá-la em casa e com a faca...mas não chego a esse preciosismo - compro carne e mando picá-la no talho) em forma de petite piscine e deposito aí uma gema de ovo. Rego com um pouco de azeite virgem e umas gotas do &lt;/span&gt;&lt;a style="font-family: arial;" href="http://queergourmet.blogspot.com/2005/08/ingredientes-i.html"&gt;Quinta da Avó em Aguardente.&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family: arial;"&gt;As quantidades de cada ingrediente são decididas por cada um e a mistura é feita no prato. Convém misturar muito bem de modo a não ficarem pedaços de carne sem temperos e outros demasiado temperados.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family: arial;"&gt;Acompanham-no à mesa umas couves de Bruxelas estufadas num refogado generoso em azeite e cebola, a que se junta um pacote de natas pouco antes de estarem prontas. Claro que nem preciso de referir as gotas do tal..que lhe dão um toque absolutamente fenomenal! As televisões aproveitam cada labareda, cada lágrima de quem perdeu tudo, cada desgraça pessoal para tentarem acrescentar um pontinho na guerra das audiências.&lt;br /&gt;&lt;br /&gt;Os pirómanos, embevecidos por verem o "fantástico" resultado do seu labor com honras de abertura de telejornais, cada vez se acicatam mais!&lt;br /&gt;&lt;br /&gt;"Hoje foste tu a abrir o telejornal...amanhã hei-de ser eu" - é como imagino os diálogos entre eles...&lt;br /&gt;&lt;/span&gt;&lt;span style="font-family: arial;"&gt;&lt;br /&gt;Enquanto houver concursos para as melhores imagens dos incêndios como o que decorre na SIC, vai haver mais motivos para os pirómanos actuarem. É absolutamente vergonhoso o que esta estação está a promover!&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-family: arial;"&gt;Só há uma maneira de acabar com isto. A bem ou a mal, tem de deixar de haver publicidade aos fogos. Eu explico... resolver o assunto a bem significaria um entendimento entre os orgãos de comunicação, a começar pelas televisões, de modo a banir toda e qualquer referência a incêndios. Resolver o assunto a mal significa que haja coragem do poder político para IMPOR a censura a este assunto, a bem de todos nós. É fundamental ter uma faca extremamente bem afiada.&lt;br /&gt;&lt;br /&gt;Começamos por espalhar sal grosso e oregãos no fundo de uma travessa. Em seguida, laminamos o tomate como se de carpaccio se tratasse e vamos dispondo as fatias (uma a uma) na travessa, cuidando que fiquem bem espalhadas. Sendo necessário acrescentamos mais umas pedras de sal e umas folhas de oregãos. Quando tenho paciência, pico muito finamente uns dentes de alho e junto ao sal e aos oregãos em cada camada, mas funciona lindamente sem isso!&lt;br /&gt;&lt;br /&gt;Depois de os tomates estarem laminados, faz-se o mesmo a uma cebola média cortada a meio.
